Fast day soufflé omelette “aux fines herbes”.

Using just one egg yolk means you still get the egg flavour, but nowhere near as many calories, whipping the egg whites for a soufflé omelette takes more time than just making it normally (which works too btw), but makes it looks more impressive and a much larger portion and is worth the effort IMO.
