Fast day soufflé omelette “aux fines herbes”.

Using just one egg yolk means you still get the egg flavour, but nowhere near as many calories, whipping the egg whites for a soufflé omelette takes more time than just making it normally (which works too btw), but makes it looks more impressive and a much larger portion and is worth the effort IMO. Roasting tomatoes give even insipid supermarket tomatoes deep, intense flavour. And they are extremely versatile. So leftovers are always going to be welcome in your fridge.
